Recipe: Chocolate Chip Cookie Dough Frosting

I posted this picture on Instagram on Valentine’s Day and have had people swooning and begging for the recipe!  I stumbled upon it on Pinterest of course by Sally’sBakingAddiction Warning: this is NOT healthy and is NOT gluten free {although you could make it gluten free}!  It can most definitely be used just to eat.  So, if you’re like me and don’t care too much for cake, go ahead and make this frosting and eat it alone!  It can also be made into a dip for a dessert bar.  It literally tastes like chocolate chip cookie dough! Ok, on to the goodness!

What you’ll need

  • 1/2 C. Unsalted Butter
  • 3/4 C. Light Brown Sugar
  • 1 tsp. Vanilla Extract
  • 1 1/4 C. Flour {substitute with Almond Flour or another gluten free flour of choice}
  • 1/2 tsp. Salt
  • 4 Tbsp. Milk {or almond milk} – This can be adjusted depending on the consistency you want.  I used 3 to make it thicker.  Use more to make a dip.
  • 1 C. Mini Chocolate Chips

Cream the butter and sugar.  Then add the vanilla and mix well.  Next add the flour and salt.  Once that is mixed well, add the milk until it is the consistency you want.  Finally fold in the chocolate chips.  Frost cupcakes or eat it just the way it is!

Barbecued Chicken Bacon Jalepeno Bites & A Superbowl Recipe Pinterest Linkup

The Superbowl may as well be a national holiday!  I probably put more thought into what’s on the Superbowl menu than I do the Thanksgiving menu! I thought it would be fun to share all of our favorites so be sure to share yours either in the link up or the comments below.  And, don’t forget to follow my “Superbowl Yummies” board on pinterest where I’ll be pinning the recipes that get linked up below so you can easily find them!

These Barbecued Chicken Bacon Jalapeno Bites are to die for!  And they are actually pretty easy to make!

Here’s what you’ll need:

  • 6 Chicken Breast Tenders {or 3 Chicken Breasts}
  • 6 Slices of Bacon
  • 3 Jalapenos
  • Cream Cheese
  • Toothpicks

First you’ll want to slice the Jalapenos into spears and remove the seeds.

Next, lay out your chicken breasts on wax paper and tenderize {I just use a rolling pin}.  Then cut each tender in half.

Now you’re going to put a dollop of cream cheese in the middle of each piece of chicken and put the jalapeno spear on top.  As you can see I left a few without jalapenos for my little guy who doesn’t like spicy!

Next, you’re going to cut the bacon slices in half.  Roll each chicken tender with the bacon around it and insert toothpick to hold together.

Place on the barbecue on medium heat and grill until the bacon is brown and crispy!  They are so tasty and will be the hit of the party!

Yummy Green Smoothie Recipe : Even My Ninjas Love it!

I’ve been making this smoothie for quite some time now and actually took these pictures a few months ago, with every intention of getting them up on the blog.  A day late and a dollar short seems to be my thing… hopefully that is changing!  Anyways, I’ve seen this smoothie, in lots of variations, all over Vitamix {definitely a culprit of my time wasting}.  It is a quick, tasty, healthy treat that you and your little ninjas will adore.

Vitamix

Place the following ingredients in your blender in this order:

Ice – about 1 C.
Spinach – 1-2 C.
Banana – 1
Pineapple – 2 Spears
Water – about  1 C. {you can use milk, almond milk, or coconut milk}
* You can also add Greek Yogurt if you want to get some extra protein in.

Vitamix

Sorry for the “about” and the “1-2″… I’m not all that good at measuring things.  I just throw stuff in the blender and go!  Oh, and if you don’t have a Vitamix, I HIGHLY recommend.  They’re pricey, but worth it!  No chunks of spinach to freak the ninjas out 🙂  You’ll love, not only the taste of this smoothie, but how good it is for you!

Chipotle Sweet Potato Fries Recipe

30 Days to a Healthier You

As I promised in my 30 Days to a Healthier You post this morning,  I have a tasty recipe that we love for Chipotle Sweet Potato Fries!  Sweet Potatoes are better for you than regular potatoes and baking them makes them that much healthier!

Here’s what you’ll need:

4 Sweet Potatoes
1 t. Salt
1 T. Chipotle Chili Powder {you can start with less depending on how spicy you like 😉 }
2 T. Canola Oil

Preheat oven to 400.  Cut your sweet potatoes into 1/4″ fries.  Place them into boiling water for 5 minutes.  Drain water.  Toss the fries with salt, chipotle powder and oil.  Place them on a cooking sheet and bake at 400 for 30 -40 minutes or until they’re crispy enough for you!  I usually turn them once during baking and if it looks like they need more chipotle or to stay in longer, go for it!  I feel like my baking time changes depending on how thick I cut the fries {I hate cutting fries!}.

We love spicy so we usually end up adding more chipotle once they’re done.

Recipe: Meatball Pizza & Homemade Pizza Dough

 

Well, so far, so good on the Menu Planning!  Last night we made Meatball Pizza, a Rachael Ray recipe.  It was so tasty and everyone in the family gave it 2 thumbs up!  I even made my own dough!  If you don’t feel like making your own dough, by all means, just grab a refrigerated one at the store 😉

Here’s what you’ll need:

Pizza Dough

1 1/4 C. Hot Water
3 Tbsp Olive Oil
3 Tbsp Organic Sugar
1 tsp. Salt
3 C. Unbleached Flour {I mix 1/2 Whole Wheat 1/2 White}
2 1/2 tsp. Quick Rising Yeast

Meatball Pizza

Pizza Dough
Handful of flour or cornmeal
Extra Virgin Olive Oil 2 Tbsp, plus some for drizzling
2 Tbsp. Finely Chopped Rosemary
Coarse Salt
1 1/2 Pounds Ground Sirloin {I use ground turkey to cut down on the fat!}
1 Medium Onion, finely chopped
4-6 Cloves of Garlic, finely chopped
Black Pepper
1 6oz. Can Tomato Paste
1/2 C. grated Parmigiano-Reggiano
Handful Flat-Leaf Parsley, chopped
1 tsp. Dried Oregano
3/4 lb. Fresh Mozzarella or Brick Mozzarella, sliced or grated

Preheat oven to 425 degrees F.  I use my KitchenAid to mix my dough.  Place dough ingredients in mixer in order listed.  Knead with dough hook for about 5-7 minutes.  If it looks to wet or sticky, add more flour.  Drizzle cookie sheet with olive oil.  Sprinkle the dough with flour or corn meal and then spread the crust on the pan.  Score with a fork and drizzle more olive oil on the dough.  Season the dough with rosemary and a little salt {I add garlic powder too 😉 }.  Place in the oven for 10 minutes.

Heat a large skillet over med-high heat.  Add 2 Tbsp. olive oil, then the meat.  Brown and crumble for a few minutes, then add onions and garlic.  Season the meat with salt and pepper.  Then, work in the tomato paste using the back of a wooden spoon to combine.  Stir in the Parigiano-Reggiano, parsley, and oregano.

Remove pizza crust from oven and top with meat mixture.  Spread cheese over the pizza and return to oven for another 10-12 minutes.

Viola!  You have a tasty, fairly healthy, meal for your family!  Making things at home, from scratch is always a better choice than eating out.  Not only does it save you money, you know where the ingredients came from!

This Morning’s Juice Recipe

In an effort to become a healthier person, I have been experimenting with juicing!  I am so not a veggie person so I’m doing it to get the nutrients my body needs.  I am actually enjoying it, so I thought I’d share some of my favorite recipes.  Because, to be honest, some are pretty rank!  We bought the 30 Days to a Healthier You Series a few weeks ago and it is working like a charm.

This mornings juice was pretty tasty.  Here’s what I used:

5 Carrots
2 Celery
1 Beet
1 Green Apple

This made 16 oz of juice, which is considered 1 serving.

Recipe: Home Made Chic-Fil-A

So my kids had been begging me to make these Chic-Fil-A nuggets at home and I finally caved!  We had some chicken breast that we got a great deal on at Sprouts and I figured home made has got to be a little bit better than eating out right?  They were actually quite delicious and pretty darn close to the real thing!

Here’s what you’ll need:

4 Chicken Breasts
2 Eggs
2 Cups Milk
2 Cups Flour
5 Tablespoons Powdered Sugar
1 Teaspoon Pepper
2 Tablespoons Salt
Oil to cover the ckicken

Cut the chicken breasts into small chuncks {about 1-2 inch cubes}
Mix the dry ingredients in a bowl and set aside.
Mix Egg and Milk in a bowl.
Dip cut up chicken into the egg mixture, then coat with dry mixture.  Then dip back into egg mixture and back into dry.
The oil may take up to 20 minutes to heat {depending on the size and depth of your pan} so if you want to start that while you’re coating the chicken it may save you some time. I put mine on medium and just keep an eye on it while I work on the chicken.
You can test the oil by dropping a small amount of the flour into the pan.  If it sizzles and fries up, your oil is ready.
Place chicken in the frying pan and let fry for 5-6 minutes.  It should be a nice golden brown color.  If it’s getting too dark quicker than 5-6 minutes, you may need to turn down the heat.

Voila! You’ve got yourself some handy dandy Chic-Fil-A in your own home!  Their secret remains a recipe.  Although these were not exact, they were delicious and cost me under $10 for 6 people!  We also made some sweet potato fries for the side 😉

Looking for a more inexpensive, lower calorie margarita recipe?  My sister in-law taught me this one.  It’s really done by taste so when you’re finished you can add more lime or lemon depending on how you like it.

Fill cup with 2/3 ice
Put in 2 shots of tequila
Squeeze Fresh lime juice {about 1/2 lime}
Squeeze Fresh lemon juice
Add Club Soda {almost to the top of the glass}
Splash of Triple sec

This recipe is so light and refreshing and doesn’t have the High Fructose Corn Syrup that’s in regular mixes!  You have to make up for the alcohol somewhere right 😉

Slow Cooker BBQ Pulled Pork

My son has been begging me for our Pulled Pork Sandwiches and I honestly haven’t been in the mood.  It’s more of a Fall comfort food to me but he kept asking and asking so I figured I’d kick of September with Pulled Pork Sandwiches!  We already had a HUGE slab of Pork Shoulder for carnitas {I’ll post that recipe next week} so we used about 1/3 of it for the sandwiches!

Here’s what you’ll need:

2 lb Pork Shoulder Roast
1/2 Cup Chopped Onion
1 Tablespoon  Minced Garlic
1/4 Cup Brown Sugar
1/2 teaspoon Dry Mustard
1/2 teaspoon Salt
1/2 teaspoon Pepper
1 Cup Barbeque Sauce
1 Cup Ketchup
1/4 Cup Worcestershire Sauce
Splash Liquid Smoke

Cut the pork in to small chuncks {about 1″- 2″}.  Put into Crock Pot with all other ingredients.  Give it a little stir.  Cook on low for 6-8 hours.

I usually make my own bread for our sandwiches but our kitchen faucet was broken today so I was avoiding using the kitchen at all costs!  Hubby ran to the store and bought some King’s Hawaiian Buns and they were delish!  Toast them first so that they don’t get too soggy.  Don’t be stingy on the sauce either.  We put a ladle full on top of the meat of each sandwich {and they still end up a little soggy 😉 }

The nice thing about this recipe is you can buy the pork in bulk and split it into freezer bags.  Add all of the ingredients before freezing.  Then, the night before you are going to make it, defrost it in the fridge and you have NO PREP WORK in the morning!  This is what I usually do but since this was the first of the season and not really planned I did it all today.
